2. Banquet on Friday evening

Projecting the number of meals you will need is very problematic. Since meals will be included a part of the registration process, a number of folks will show up in the registration count but will not actually attend the meals. For example, some will have other plans; some will only attend one day of the conference; etc. Additionally, you’ll need to estimate the number of meals needed several days before the conference so you’ll need to estimate the number of walk-on registrations. You might plan for 10 walk-on registrations and 90% attendance, but this is only a guess. Planning for 100% attendance would have been close for the 2008 conference. Also, late registrants must be warned that they may not have the option of special meals.

Suggested starting date: 180 days before the conference.
